Extra Cheesy Cauliflower Skillet Dip

 

Are you ready for some…. CAULIFLOWER?!

Yeah, I guess football too.  But really, Sunday’s Super Bowl is going to be all about cauliflower.

You know that little white veggie everyone’s putting into everything these days?

I went there.

But I did it bigger.  And badder.  And cheesier than anyone has ever done it before!!!!

Good lord there’s so much cheese.

Sometimes I like to be a little sneaky.  It’s good for the soul, ya know?  Like chicken soup.  Yes it may sound juvenile, but I just can’t help but love me a good little sneak.  Like when you convince your bartender you’ve only had two drinks instead of three?  Sneaky.  Or when your man asks about your new shoes, and you casually respond “babe, I’ve had them forever”?  Stealthy.

Or when you feed a bunch of dudes a cauliflower dip and they have no freakin’ clue?!

Pure DECEPTION.

Have you noticed how fratty men get about the Super Bowl?  It’s like for one night a year every man in America has their testosterone levels tripled, and us chicks are left wondering who the hell are these savages we’ve voluntarily decided to spend time with.  Like, they place petty bets on their Super Bowl grids as if they’re high rollers, they beat their chests in excitement like something that escaped from the zoo, and of course they insist on eating only manly foods.

You know, like chicken wings that some “bro” probably dropped on the floor.

So this year, let’s beat them at their own game, shall we?

Let’s trick them into eating something girly, and healthy, and not covered in spilt Bud heavys.

Let’s make them eat cauliflower.

Lots of it.

This dip can easily be prepped in advance, so don’t worry about your secret staying safe.  Clearly I had my girrrls in mind when I topped this with roasted tomatoes, but feel free to swap those for slices of pepperoni or crumbled sausage for a pizza-like taste and appearance.  And lastly, when all has been devoured, bask in the big cauliflower reveal – Being smug is highly recommended.

Extra Cheesy Cauliflower Skillet Dip

Yield: 6 - 8 servings

Prep Time: 20 mins

Cook Time: 25 mins

Total Time: 45 mins

Ingredients:

  • 1 Medium Head Cauliflower
  • 1 Medium Tomato
  • 1 cup Part-Skim Shredded Mozzarella Cheese
  • ¾ cup Shredded Parmigiano Cheese
  • 1 tsp Extra Virgin Olive Oil
  • 2 tsps Crushed or Minced Garlic
  • 2 tsps Rosemary
  • 1 tsp Sea Salt & Coarse Black Peppercorn - approx.

Directions:

  1. Break cauliflower into florets, discarding of stems.  Steam covered over pot of shallow boiling water for ~12 minutes until tender, then remove from heat and allow to cool.
  2. When cauliflower is room temperature, pour into food processor.  Pulse until pureed, then salt and pepper to taste. Next add in parmigiano, garlic, and rosemary, again pulsing well before transferring to oven-safe skillet.
  3. Evenly pour cauliflower mixture into skillet, then cover with mozzarella.  Lightly salt & pepper sliced tomato, then drizzle with EVOO before topping over dip.  Bake at 375F for 20 minutes until bubbly, then broil for 3-4 minutes more until browned.  Immediately plate & serve, garnishing with fresh rosemary if desired.

    JUST the other day my husband looked down and said, “those shoes look new…” And I said, “Oh, your mom got me these for Christmas”. Silly guy fell for it. Haha! These cheese dip looks amazing! Love that you snuck some cauliflower in there. The cauliflower cancels out the cheese, right? *wink*

    I like your style. :) Sometimes we have to trick our men into eating the things we think they should be eating. The other night I served Kevin barley and said it was brown rice so he’d eat it without bitching. Ha! LOVE this cheesy amazingness.
