Funfetti Chocolate Chip Cookie Cake

It’s mah birrrthday!!!!!!


Yes, I am one of those people who love, looove their birthday.  Like, I live for it.  And treat it like a national holiday.  And religiously take the day off every year just so I can fully bask in the all-about-me b-day glow.

Basically, I’m the ultimate birthday girrrl.  And because today is the most special of days, a supremely special treat must be served.

A special little somethin’ like THIS.

The most magnificent of birthday creations ever.

When your nickname is Cakes you might as well live up to your name and bake up a sweet little treat for your sweet little day.  So I decided to be all wildly adorable and do just that, except that this cake is sooo much more than a cake.  It’s essentially part cookie, part cake, and 100% shove-this-in-my-mouth-now, chocolate-all-over-my-face, peeps-be-staring, it’s-my-birthday-I-do-what-I-want!, totally delicious.

Normal descriptions, I know.

At first I was just going to make myself a giant chocolate chip cookie, but that didn’t seem all that creative.  Then I was going to make myself an old-fashioned cake, but I figured posting a Duncan Hines recipe on here wouldn’t win me much respect.  So eventually I decided to skip the boxed stuff, break out my dreaded baking skills, and see what sort of catastrophe ensued.

What happened next?  I could barely believe it myself.

If you spend even just a little bit of time on here you’ll notice that I’m 1- Insane, and 2- Not so fond of baking.  The world of sugar and flour just really ain’t my thang, so I don’t make an effort to do all that much of it.  I guess I’m just more of a tweak it and tune it kinda gal, the type of chick who likes to adjust her food as she goes and not be limited to a rigid recipe.  So when I decided to bake myself a birthday treat and made the ridiculous move to just wing it, my hopes weren’t very high.  But sometimes being a child of chaos pays off, and this baby right here is one of them.

I knew you guys were gonna totally flip for this, so I’ve been dyyyying to get it posted.  I mean, do you see those sprinkles?  And the miniature size?  And that candle?!  Crazy adorbs, I know.

Since I’ve got this wedding situ happening in a few months I figured it was best not to bake myself a whole cake, so I found this mini springform pan that gave me the exact birthday treat dimensions I was aiming for.  When it comes to my hybrid creation, the best way to explain it is this has all the taste of a chocolate chip cookie, but the light fluffy texture of a cake.  It’s moist and airy but still has a lingering cookie density, if that makes any sense, and it’s sweet without being too sweet, which means you could easily inhale this in one sitting.  Not that I did that or anything…. just sayin’.

Anyway, the important thing is that birthdays RULE.  So have a slice on me, will ya?

Funfetti Chocolate Chip Cookie Cake

Yield: 2 servings

Prep Time: 10 mins

Cook Time: 20 mins

Total Time: 30 mins


  • 1/2 cup All Purpose Flour (sifted)
  • 1 Large Egg
  • 2 tbsps Light Butter (melted)
  • 2 tbsps White Sugar
  • 1 tbsp Brown Sugar
  • 1/2 tsp Vanilla
  • 1/4 tsp Baking Soda
  • 1/4 cup Milk Chocolate Chips - approx.
  • 3 tbsps Rainbow Sprinkle - approx.
  • Crisco or Cooking Spray to grease
  • Mini Springform Pan


  1. In small bowl sift flour, baking soda, and white sugar.  In another bowl combine egg, melted butter, brown sugar, and vanilla, whisking vigorously until smooth.  Combine dry ingredients with the wet, using a wooden spoon to throughly mix all ingredients.
  2. Once batter takes hold, fold in chocolate chips and sprinkles.  Transfer mixture to amply greased springform pan, then bake at 350F in oven middle rack for 20 minutes until set.  Allow to cool for ~10minutes, then immediately plate and serve.

>> This recipe can be scaled for a standard 9" springform or cake pan as follows: 2 cups Flour, 3 Large Eggs, 1/2 cup Butter, 1/2 cup White Sugar, 1/4 cup Brown Sugar, 2 tsps Vanilla, 1 tsp Baking Soda, 1 cup Chocolate Chips, 3/4 cup Rainbow Sprinkles, 1/4 water or oil (if needed) - Bake at 350F for 30-40 minutes until a toothpick comes out clean.
