Because Mighty Maple Oven Fried Chicken is craaazy freakin’ good.

“What’s a Mighty Maple?” you quietly ask your computer screen.  It’s a delicious flavor of peanut butter, courtesy of my friends over at Peanut Butter & Co.  Yes, you heard me – Mighty Maple is Peanut Butter.  Which means this is Maple Flavored PEANUT BUTTER Oven Fried Chicken.

I know, I told ya.  Freak-out worthy to the max.

Am I a mad scientist?  I mean, I’m a bit mad, but more in the sense that I’m melodramatic over absolutely everything.  But a scientist?  Dear god no.  Science was always my worst subject in school and the periodic table still haunts my dreams.  But what I most certainly am is an unabashed peanut butter enthusiast.  Like, I could eat PB around the clock.  And honestly, sometimes I do.  I’ll wake up and stir some peanut butter into my oatmeal.  Later on I’ll have some PB and apples for a snack.  And then right before bed I’ll sneak in a pb&j or two, piled neatly atop ritz crackers and paired with a soothing cup of tea.

PB.  All the time.  Every time.  Go big or go home, kids!

This may sound odd coming from a food blogger, but grocery stores tend to overwhelm me.  Like, I get sweaty palms and mild palpitations and I usually consider running the second I walk through the sliding doors.  I know, getting hysterical at the sight of cookies and grape juice sounds insane.  But seriously, how much variety does one really need?  12,000 options for ketchup, cereal, everything, just seems excessive.  I mean, I already have a hard enough time choosing a wine at the liquor store.  Why else do I always leave with three bottles?  Decisions are hard.

But when it comes to peanut butter, I know what my choice is right from the get-go.  There’s no organic, stir, no-stir, sugary, whatever variety that can make me stray from Peanut Butter & Co.  Because once you get a taste of their PB, nothing else will ever compare.  Not only is their peanut butter delicious, its all-natural amazingness comes in 10 (ten!) equally amazing flavors.  I’ve made my way through about half of their selection, and damn is each one better than the next.  My most recent try was their Mighty Maple, and the second I dipped in my tablespoon I knew I needed to make Mighty Maple Oven Fried Chicken.

If you’re familiar with the blog then you know I’m a total glutton for sweet & savory.  So big surprise, I decided Mighty Maple Oven Fried Chicken was going to be a thing.  But sometimes being shameless pays off, and this dish is definitely a prime example.  Crispy, crunchy, golden skin, juicy, tender, fall-off-the-bone meat, and the sweet sinful taste of maple and peanut butter.  Does it get any better?!

If you really want to show your PB pride, melt up some Mighty Maple and use it to dip on the side.  It’s just a suggestion, but my inner pushy Italian woman is saying do it.  Like, it’s not an option.  But it’s still totally up to you.  Get it!?

Mighty Maple Oven Fried Chicken

Yield: 5 servings

Prep Time: 20 mins

Cook Time: 1 hours

Total Time: 1 hour 20 mins


  • 1 1/2 lbs Chicken Drumsticks or Wings (or both! with skin)
  • 1/3 cup + 1/4 cup Peanut Butter & Co. Mighty Maple PB
  • 1 1/2 cups Whole Wheat Panko Crumbs (I used Ian's)
  • 1/3 cup All Purpose Flour
  • 3 tbsps Light Butter (I used Land O Lakes)
  • 1 Large Egg
  • 2 Large Egg Whites
  • 1/4 cup Skim Milk
  • 1 tsp Sea Salt & Coarse Black Peppercorn - approx.
  • Crisco to grease


  1. Fit wire rack into baking tray, then lightly grease with crisco. Set aside.
  2. In two small bowls separate panko crumbs and flour. In another small bowl, whisk together egg, egg whites, and skim milk. Next, melt 1/3 cup peanut butter in microwave until liquid, ~45 seconds. Briskly whisk peanut butter into egg, incorporating as well as possible. Set aside.
  3. On large cutting board lay out chicken and generously salt and pepper on either side. Next, dip chicken into flour, shaking off the excess before dredging into egg. Lastly coat with panko crumbs, then place on wire rack. Repeat until all pieces are prepared.
  4. Melt remaining 1/4 cup peanut butter in microwave, ~30 seconds. Drizzle over chicken, then bake at 375F for one hour. Midway through cooking, melt butter in microwave. Remove chicken from oven, then use knife to spread in PB drizzle before evenly coating each piece with butter. Return to oven for remaining thirty minutes, removing when crispy and browned. Allow to cool slightly, then immediately plate and serve with a side of melted PB, if desired.

>> Peanut Butter will slightly settle at bottom of egg mixture. Re-whisk in between each chicken piece for consistency, and slather chicken with PB from bottom of dish as necessary. It gets a bit messy, but it's worth it!

    Mighty Maple is a staple of mine… I have to buy it by the case from Amazon or the PBC store since I cannot find it in the stores anymore here in Maine…. This is a dish that I cannot wait to make! Thanks!

    I’m from Buffalo so I am definitely a Buffalo wing purist – I always go for the traditional hot sauce and butter when I make my wings. But I have to admit – this is the most amazing wing recipe I think I’ve ever seen! Can’t wait to try it. Thanks!

      thanks so much James! honestly the Mighty Maple gives it just the right touch – mellow hints of sweet maple PB but not overpowering, you still get all that savory, crunchy, juicy fried chicken flavor. I hope you like it – change is good! lol

      I’m sure Trader Joe’s brand has something similar, but at my local TJ they don’t sell PB&Co.
