 Here are some things I really love about my apartment:

I live with the greatest guy I know.

I absolutely adore my neighborhood.

And I’m in a second floor walk up – best. convenience. ever.

But then.. then there are some things I really don’t love about my abode:

It’s small.

Like, half the things I own are shoved under my bed.

WHERE is my closet space?!

Also, it’s small.

This is a classic NYC catch-22.  You can’t get the great location, and the great building, and the really huge apartment, too.  I mean, you can if you’re Sarah Jessica Parker, but an HBO star I am not.  I’ve managed to get two out of the three, so I consider that to be a total normal-person success.

Though my wardrobe has definitely suffered from my lack of available hanging space, the toughest part about being in a tiny apartment is that it comes with a matching tiny kitchen.  And as you can imagine, this little wrench can create quite a few obstacles for a food blogger.

There’s the lack of counter space, the crowded stove top that can barely handle two pots at a time, the weak oven that’s never as hot as the temperature gauge claims, and to top it all off, a temperamental dishwasher that more often than not leaves me hand washing my dishes.  Suffice it to say, my manicures don’t last long.

Given the fact that my kitchen can sometimes be a not-so-friendly cooking environment, it’s nice to be able to whip up something awesome without actually needing to cook.  And since last week’s Buffalo Shrimp post was oh-so popular, I decided to keep the anti-appliance theme going with these delicious, n0-bake Peanut Butter Chocolate Oatmeal Drops.

The great thing about these little nuggets is that you can start enjoying them in less than 15 minutes.  Aside from minimal use of your microwave, these Oatmeal Drops are the ideal no-bake treat.  Easily enjoyed as a dessert, a snack, or even for breakfast, these tasty morsels are low in fat yet bursting with luscious peanut butter chocolate flavor.  Diet friendly yet totally indulgent, these delicious drops prove that good things can come in small packages!

Peanut Butter Chocolate Oatmeal Drops

Yield: 12 servings

Prep Time: 15 mins

Total Time: 15 mins

Ingredients:

  • 1 cup Old Fashioned or Steel Cut Rolled Oats
  • 3 1/2 tbsps Peanut Butter
  • 4 tbsps Mini Chocolate Chips {divided}
  • 2 tbsps Maple Syrup
  • 2 tbsps Sweetened Coconut Flakes
  • 4 tsps Skim Milk {divided}
  • MultiColor Non-Pareil Sprinkles for dipping

Directions:

  1. Pour oats into large bowl. In microwave, melt 2 tbsps mini chocolate chips for ~90 seconds, stirring midway. Add melted chocolate chips and 2 tsps skim milk to oats, mashing together with your hands until all oats are lightly coated.
  2. Next, melt peanut butter in microwave for ~60 seconds, stirring midway. Pour peanut butter and last 2 tsps skim milk over chocolate oats and again mash thoroughly with your hands. When oats are well mixed, add maple syrup, coconut flakes, and remaining chocolate chips, tossing until all ingredients are well combined.
  3. With damp hands, shape oats into golf-ball size drops, then roll into sprinkles. Immediately serve, storing leftovers in the refrigerator for up to 5 days.

      yes they’re so easy to make! great for a sweet tooth craving at breakfast or a light dessert after dinner :)
